More Than a Bakery: The Story & Mission Behind Elijah’s Flour & Oil

When we first dreamed about Elijah’s Flour & Oil, we knew we wanted to create more than a bakery and coffee shop in Dahlonega, Georgia. We dreamed about creating a table. One where there was always another chair, where families could gather, friendships could form, and people of all abilities could know that they truly belonged. A table filled with good coffee, fresh sourdough baked goods, meaningful conversations, and a community that genuinely cares for one another.

For Izzie, that dream began long before Elijah’s Flour & Oil had a storefront. It began with her younger brother, Elijah.

Elijah was born with Down syndrome, and growing up alongside him shaped the way Izzie understood joy, perseverance, patience, unconditional love, and belonging. He also opened her eyes to the ways our world does not always know how to make room for individuals with intellectual and developmental disabilities. During college, Izzie became involved with Best Buddies, where she worked to create more inclusive spaces on campus. Through that experience, she began to see an even bigger picture. Behind every person with special needs is a family navigating their own story. There are parents advocating, siblings encouraging, families walking through therapies and education, and people hoping their loved one will be given the opportunity to be known for who they are and what they can do.

Thomas and Mallory Odom understood that journey personally. As parents of Sami and Jack, they have experienced the unexpected beauty and challenges that come with raising a child with special needs. They know the appointments, educational battles, therapies, victories, difficult seasons, and incredible amount of love that can exist within it all.

Somewhere along the way, our stories met. Two families with different experiences discovered a shared purpose, and that purpose eventually became Elijah’s Flour & Oil.

Why We Created Elijah’s Flour & Oil

At the heart of everything we do is one simple belief: everyone deserves a place to belong.

Our mission is to create an inclusive bakery and coffee shop in Dahlonega, Georgia, where people of all abilities are not simply welcomed through the door, but embraced once they are here. We want to create meaningful opportunities for individuals with intellectual and developmental disabilities to experience employment, independence, friendship, confidence, dignity, and genuine connection.

We also want Elijah’s Flour & Oil to be a place of rest and community for families. A place where you do not have to explain. A place where patience is practiced, differences are valued, and every person is treated with dignity and respect.

We know the world may not always have a seat prepared for Elijah, Sami, and so many others like them. So, when there is not a seat at the table, we want to help build the chair.

That belief influences everything from the way we welcome someone through our doors to the way we serve a cup of coffee. Yes, we love freshly brewed coffee, handcrafted lattes, matcha, sourdough bagels, pastries, and baked goods. We love being a local bakery and coffee shop in Dahlonega where friends can catch up, students can study, families can spend time together, and visitors can experience a little piece of the community we love.

But what we serve is only part of why we are here.

We care deeply about how we serve and who we serve. We want every interaction at Elijah’s Flour & Oil to be rooted in patience, generosity, hospitality, and purpose. Where Generosity Rises

“Where Generosity Rises” is more than a phrase for us. It represents the kind of community we want to build here in Dahlonega.

Generosity can look like giving someone more time. It can mean choosing patience, offering encouragement, creating an opportunity, listening before assuming, or making room for someone who has too often been overlooked. Sometimes generosity is as simple as pulling up another chair.

Our hope is that Elijah’s Flour & Oil becomes a daily expression of that kind of generosity.

Through this Dahlonega bakery and coffee shop, we have an opportunity to bring purpose and hospitality together. Every latte poured, sourdough bagel baked, pastry shared, conversation started, and person welcomed through our doors gives us another opportunity to live out the mission that brought us here in the first place.

We want to help build a more inclusive community in Dahlonega where individuals with intellectual and developmental disabilities are given meaningful opportunities to contribute their gifts, develop greater independence, build friendships, and experience the dignity that comes from being known and valued.

We know true inclusion does not happen overnight. It requires patience, compassion, listening, learning, and a community willing to make room. But we believe even something as simple as a neighborhood bakery and coffee shop can be part of creating that change.

One person, one conversation, one opportunity, and one seat at the table at a time.
